The hacienda keeps tradition alive as a working farm, producing 6000 liters of milk each day, cheese, cream, trout, wool, mutton, horses, wood, and even compost from the earthworm farm. Mouth-watering, authentic Ecuadorean cuisine made using ingredients sourced from the farm is served three times per day.
